Nutrition notes

Tuna is an excellent source of lean protein, supporting muscle repair and satiety. It also provides vitamin B12, selenium and omega-3 fatty acids, nutrients that contribute to brain health, immune function and cardiovascular wellbeing.

Sesame seeds add calcium, magnesium and antioxidant-rich lignans, while the ponzu dressing provides bright citrus notes that balance the richness of the fish without relying on heavy sauces.

For best nutritional quality, choose sustainably sourced sashimi-grade tuna and avoid overcooking to preserve its delicate texture.

FAQs

Can I cook tuna all the way through?

Yes, although sashimi-grade tuna is traditionally served rare. Cooking beyond medium will produce a firmer, drier texture.

What is ponzu?

Ponzu is a Japanese citrus soy sauce made from soy sauce combined with citrus juice such as yuzu, lemon or lime. It adds a bright, savoury flavour that’s ideal with seafood.

What tuna should I buy?

Look for fresh sashimi-grade yellowfin or bluefin tuna from a reputable fishmonger if serving rare.

Can I make this ahead?

The dressing can be prepared up to three days ahead, but the tuna is best cooked immediately before serving.

Sesame-crusted tuna with ponzu dressing proves that exceptional food doesn’t need to be complicated.
