Proscuitto wrapped asparagus

Recipe by Samantha Gowing

Enjoy the delicate balance of salty, smoky prosciutto and the fresh, earthy flavour of asparagus.

a wholesome, elegant dish that reflects Chef Sam Gowing’s food-as-medicine philosophy. It showcases the balance between nutrient-rich asparagus and the savoury indulgence of prosciutto, capturing the essence of healthy, flavourful eating. T

Ingredients

Scale

1 bunch of fresh asparagus, trimmed

8–10 slices proscuitto

Olive oil, for drizzling

Fresh lemon zest

Cracked black pepper, to taste

Salt, to taste

To serve

Lemon wedges

Watercress or sprouts vree

Instructions

  1. Preheat oven to 200°C.
  2. Wash and trim the tough ends of the asparagus stalks. You can do this by simply snapping them off where they naturally break. Take a slice of prosciutto and wrap it gently around each asparagus stalk. Ensure the prosciutto covers most of the asparagus but doesn’t completely encase it. The prosciutto should still allow the tips of the asparagus to show.
  3. Place the wrapped asparagus on a baking tray lined with parchment paper. Drizzle lightly with olive oil and season with freshly cracked black pepper and a pinch of sea salt.
  4. Place the tray in the preheated oven and bake for 10-12 minutes or until the prosciutto becomes crisp and the asparagus is tender.
  5. Once baked, remove from the oven and zest fresh lemon over the top for an extra burst of flavor.
  6. Serve as an appetizer, side dish or party canapé.
