Slices of Paleo apple, pecan and coconut slice ready to bake with fresh apple slices and pecans.

Ingredients

Scale
1 cup fresh Medjool dates, pitted 1 cup water 11/2 cups coconut flour 1 teaspoon baking powder (aluminium free) 1 cup shredded coconut 1 cup pecan nuts, roughly chopped 1 cup homemade almond milk 2 apples, cored and sliced 1 tablespoon maple syrup

Instructions

  1. Preheat the oven to 170°C (150°C fan-forced). Lightly grease or line a 20cm square baking tin or 20 x 10cm loaf tin with baking paper.
  2. Place the chopped dates and water into a small saucepan. Bring to a gentle simmer over medium heat, stirring occasionally until the dates have softened and most of the liquid has been absorbed, about 5–7 minutes. Remove from the heat and allow to cool slightly.
  3. In a large mixing bowl, combine the coconut flour and chopped pecans. Pour in the almond milk and stir until well combined.
  4. Add the warm date mixture and mix until a thick, even batter forms.
  5. Spoon the mixture into the prepared tin and smooth the surface with the back of a spoon.
  6. Arrange the sliced apple evenly over the top, gently pressing the slices into the batter. Drizzle with maple syrup and, if desired, sprinkle with a little cinnamon.
  7. Bake for 45 minutes, or until the apples are tender, lightly caramelised and the slice is firm to the touch. A skewer inserted into the centre should come out clean.
  8. Allow the slice to cool in the tin for 10–15 minutes before lifting out. Slice and serve warm or at room temperature.

Notes

Serving Suggestion: Delicious served with homemade coconut yoghurt, coconut cream or a dollop of almond butter for a nourishing breakfast or afternoon tea.
