Chef Sam Gowing’s immune boosting silver beet soup

Why this soup is so good for you

This is more than just a simple vegetable soup — it’s built from ingredients that quietly support your body.

Silver beet is rich in magnesium, iron and chlorophyll, helping to support energy production and overall vitality. Its deep green leaves are known for their role in supporting gentle detoxification processes.

Garlic and ginger bring natural anti-inflammatory and immune-supportive properties, helping to warm digestion and support the body during times of stress or seasonal change.

Potatoes add natural creaminess while providing a soft, grounding source of carbohydrate — making this soup satisfying without feeling heavy.

The addition of yoghurt provides beneficial bacteria for gut health, while a squeeze of citrus at the end adds vitamin C, helping support immunity and enhance nutrient absorption.

  • Yield~2 litres (serves 8)

There’s something deeply comforting about a pot of green soup simmering on the stove. This all-season silver beet soup is simple, nourishing and full of quiet strength — built on a classic vegetable base, lifted with ginger and garlic, and finished with soft greens and potato for a naturally creamy texture.

It’s the kind of recipe you return to often — easy to prepare, deeply satisfying, and supportive for everyday wellbeing.

Ingredients

Units Scale
1 tablespoon olive oil 1 large brown onion, roughly chopped 1 large carrot, roughly chopped 2 celery stalks, roughly chopped 2 garlic cloves, chopped 1 tablespoon fresh ginger, chopped 1 large bunch silver beet, stems finely chopped, leaves roughly chopped 2 large potatoes, peeled if needed, roughly chopped 3 sprigs fresh thyme 1 fresh chilli, optional 1.5–1.6 litres chicken or vegetable stock Salt, to taste To serve Yoghurt or sour cream Pink peppercorns Crusty bread Squeeze of lemon or lime

Instructions

  1. Heat the olive oil in a large saucepan over low to medium heat. Add the onion, carrot, celery, garlic and ginger, and cook gently, stirring often, until softened and fragrant. This should take around 7 to 10 minutes — you’re building flavour without browning the vegetables.
  2. Stir through the finely chopped silver beet stems and cook for a further 2 to 3 minutes, allowing them to soften and integrate into the base.
  3. Add the potatoes, thyme and chilli (if using), then pour in the stock. Bring everything up to a gentle boil before reducing the heat to a simmer. Cook for around 10 minutes, or until the potatoes are completely tender.
  4. Add the silver beet leaves and stir until just wilted. Remove from the heat and allow the soup to cool slightly.
  5. Blend in batches until smooth, then return to the pot. Stir well, adjust seasoning with salt, and add a little extra stock or water if needed to reach your preferred consistency.
  6. Serve warm.

Serving Suggestions

Serve this immune boosting silver beet soup with a generous dollop of natural yoghurt, allowing it to melt gently through the surface. Finish with freshly cracked black or pink pepper and a squeeze of lemon or lime to lift and brighten the flavours.

A few fresh thyme leaves scattered over the top add a subtle aromatic note, and a slice of warm, crusty bread makes it a complete and comforting meal.
