How to make cauliflower rice

Cauliflower rice is a favourite salad that’s so quick and easy with cauliflower, cranberries and a kiss of mint. This vibrant, nutrient-packed dish is all about flavour, texture, and a gentle reset for your body.

Lightly pulsed cauliflower creates a fluffy, couscous-like base that’s easy on the digestion and low in refined carbs. Add crunchy macadamia nuts for healthy fats and protein, and sweet-tart cranberries for a pop of antioxidants — the perfect combo to support liver detoxification and overall wellness.

Fluffy cauliflower rice with toasted macadamia nuts, dried cranberries and fresh herbs served as a healthy gluten-free side dish.

Cauliflower, along with other cruciferous veggies, contains compounds that stimulate your liver’s Phase 2 detox pathways, helping your body neutralise and excrete toxins efficiently. Macadamias provide nourishing monounsaturated fats to support hormone balance, while cranberries bring antioxidant protection to help your cells recover from oxidative stress.

It’s a dish that’s bright, satisfying, and designed to help your body feel light, energised, and nourished — perfect as a side or a base for a larger meal.

Ingredients

Scale

1/2 head cauliflower, roughly chopped

1 cup macadamia nuts

1/2 cup parsley, finely chopped

1/2 cup mint, finely chopped

1/2 cup dried cranberries

Dressing

2 lemons, juice of 2, zest of 1

1/3 cup macadamia nut oil

Pinch ground turmeric

Pinch salt

Edible flowers to garnish

Instructions

  1. Prepare the cauliflower: Place cauliflower florets in a food processor and pulse until they resemble fine breadcrumbs or ‘rice’. Avoid over-processing — you want a light, fluffy texture, not mush.

  2. Mix the base: Transfer the cauliflower to a large mixing bowl. Add the macadamia nuts, cranberries, and any other ingredients listed for the salad base. Gently toss to combine.

  3. Make the dressing: In a small bowl, whisk together all dressing ingredients until smooth and well combined.

  4. Bring it all together: Pour the dressing over the cauliflower mixture and toss lightly, ensuring everything is evenly coated without crushing the ingredients.

  5. Serve and enjoy: Let the salad sit for a few minutes to allow the flavours to meld, then serve as a side or a light, detox-friendly main.
