These Byron Bay bliss balls have been a favourite in my cooking classes for years. They are naturally vegan, packed with wholesome ingredients and require no baking, making them the perfect healthy snack to keep in the fridge for busy days, especially good after a long surf at The Pass.

Unlike many commercial energy balls, these are made entirely from real food. Sweet Medjool dates, antioxidant-rich cacao, seeds, goji berries and almond meal combine to create a nourishing bite that delivers fibre, healthy fats and plant-based protein without relying on refined sugar.
Whether you enjoy one after exercise, tuck a few into a lunchbox or serve them with tea, they’re an easy way to satisfy a sweet craving while providing sustained energy.

Ingredients
1 cup cacao powder
1 cup sunflower seeds
1 cup pepitas (pumpkin seeds)
1 cup goji berries
1 cup fresh Medjool dates, pitted
1 cup sultanas
1 cup almond meal
2 vanilla beans, scraped
1 tablespoon maple syrup
2 teaspoons maca powder *optional
2 tablespoons cacao butter, melted
3/4–1 cup coconut oil, melted
1 – 1 1/2 cups shredded coconut, for rolling
Instructions
- Melt the cacao butter and coconut oil gently over low heat or in a heatproof bowl over hot water.
- In a high-speed food processor, combine all ingredients except the melted cacao butter, coconut oil and shredded coconut. Blitz until the mixture resembles a coarse dough.
- Gradually add the melted cacao butter and coconut oil while continuing to process. Blend until the mixture forms a smooth and slightly sticky dough.
- Transfer the mixture into a large mixing bowl, next to a board or clean workspace. Scatter the board or clean workspace with shredded coconut.
- Roll the mixture into balls of your desired size. If the dough is too soft to handle, chill it briefly to firm up before rolling.
- Place the balls on a lined tray and refrigerate until firm, about 1 hour.
- Store in an airtight container in the fridge for up to 14 days or freeze for up to 3 months.
Notes
Use soft Medjool dates for the best texture. If they’re a little dry, soak them in warm water for 10 minutes before blending and drain well.
If the mixture feels too soft, refrigerate it for 20–30 minutes before rolling.
For variety, roll the balls in shredded coconut, finely chopped pistachios, cacao powder or toasted sesame seeds.
Stored in an airtight container, they’ll keep for up to two weeks in the refrigerator or three months in the freezer, making them ideal for healthy meal preparation.
These bliss balls have been a staple at Byron Bay Cooking School because they’re simple, delicious and made from everyday ingredients that nourish as much as they satisfy.
